Why are wild shrimp better than pond-raised shrimp?
We have a unique set of conditions in South Louisiana. We have an influx of freshwater from numerous rivers that mixes with salt water. It makes the water brackish. Down south, we call it sweetwater and it gives the shrimp such a sweet taste due to the low iodine. Plus, Louisiana has one of the largest shrimp estuaries in the country. Farmraised shrimp, on the other hand, are genetically altered to grow quickly and to survive in dense populations in ponds. Farmraised shrimp are also fed antibiotics to prevent diseases in these small spaces. The trade-off for profits is a sacrifice of taste and quality.
Are your fishing methods and practices eco-friendly?
We are extremely "green"! Our first priority is to keep the natural resources of both the bayou and the world around us from depleting – after all, that's the lifeblood of our business. Alternative fuels have always been of extreme interest to us and now with biodiesel as an alternative, we hope to soon run our boat off biodiesel fuel. We also use National Marine Fisheries-certified turtle excluder devices in all of our trawls; allong with fish excluder devices in all of our nets, this greatly reduces bycatch. We limit our trawling times to 30 minutes to reduce the mortality rate of any bycatch, a process which also ensures a top quality product. Finally, a good portion of our fishing time is spent in deep passes with our nets fishing the surface and never touching the bottom. This method is the least invasive of the ecosystem. Pre-Katrina, we invested in stationary rigs that fished in strong currents, anchored in place and trawling only the surface, burning no fuel and causing no adverse effects on the bottom.
